Appearance: Amber, Attractive. Light beading.
Nose: A mild, fresh and simple nose that’s fuller than you first anticipate. First there’s almond paste, with stewed fruit, redcurrants and above all, apple skins and baked apples behind, later gaining a light pastry note (apple tart). Later, potpourri and rosewater. When reduced, holds together well. Sweeter. Jammy. More apple-like; still some almond paste. An appetising vanilla-fudge scent appears, with a hint of wood-smoke in the distance.
Body: Medium. Smooth.
Palate: Excellent texture and oilier than you’d expect from such a lush nose. Sweet at first, the apple flavours emerge strongly; soon developing an intense mixed spice note. Spiced tea loaf. Some cedar dryness. Mouth-drying, with a whiff of sooty smoke, and autumn fruits. Water shows its maturity; the flavour is sweet to start, with deep, round acidity (balsamic vinegar).
Finish: Short, with a long warming glow. Quickly drying.
